Hickory nut oil has a flavor reminiscent of olive oil with buttery, nutty overtones, think liquid pecan.
Nutritionally, it is similar to olive oil with its balanced blend of omega fatty acids, including oleic, linoleic, linolenic, palmitic, and stearic fatty acids. Hickory oil has a high smoke point, around 450°F, making it great as a high-heat cooking oil as well as a finishing oil for breads, salads, and the like.
Our hickory oil is cold pressed from the nuts of yellowbud hickory trees located on and around our Hunterdon County farm. Nuts were picked by Dave, Linda and the kids and pressed in cooperation with Keystone Tree Crops Cooperative which Dave is a member of.
Yellowbud or bitternut hickory trees grow native throughout NJ and much of the eastern US making hickory oil a truly local culinary oil.
